Creme de Menthe Bars
At our house, no Christmas is complete without my husband's favorite Christmas treat: Creme de Menthe bars. They usually go faster than any other Christmas treats I make so I usually make them a day or so ahead and hide them. Since we open gifts at our house on the 24th, we have spiced wine, cookies and the first Creme de Menthe bars.
Here is what you need:
For the crust:
1/2 cup unsalted butter
1/4 cup coca
1/2 cup confectioners sugar
1 teaspoon vanilla
2 cups graham crackers crumbs
Add a little Creme de Menthe liqueur if the mix is too dry
Filling:
1/2 cup butter
8 Tablespoons Creme de Menthe liqueur
3 Tablespoons vanilla instant pudding mix dry
4 cups confectioners sugar
Frosting:
1/2 cup butter
2 cups chocolate chips
In a large freezer bag place your graham crackers. Close the bag, making sure all the extra air is out. Hit it with a rolling pin to form graham cracker crumbs, or place in a blender and blend. Your choice, whatever you have more fun with.
In a pot, melt the butter. When melted, add the rest of the ingredients for the crust and stir well. press into a rectangular baking dish, chill to harden the crust.
For the filling, melt the butter, add the rest of the ingredients, whip it for a full 30 seconds. Spread over the crust and chill once more.
For the frosting; Melt the butter, then add the chocolate, mix well and spread over the cooled layers. Chill again.
This Christmas desert must be refrigerated.
