Sunny side up cupcakes


Easter is all about the eggs so why not mimic the look of sunny side up eggs in these delicious cupcakes? They are fruity, fluffy, creamy and will be a bit hit with your loved ones, not just on Easter!

This is what you need:

For about 12-14 cupcakes:

1 stick butter or margarine (I used margarine)

2/3 cup sugar

2 eggs

1 Tablespoon lemon juice

1 tablespoon vanilla extract

1 cup flour

1 large can of peaches

muffin liners

For the 7 minute frosting:

5 Tablespoons water

pinch of cream of Tartar

dash of salt

1/2 cup sugar

1 egg white

1/2 teaspoon vanilla extract

Let's get started:

Preheat oven to 375F/175 C

Drain the peaches well. I usually let them sit in a strainer in the fridge over night.

Cut little rounds out of each peach to create the egg yolk, dice the rest of the peaches and set aside to put them in the dough later.

Now mix the butter/margarine and the sugar on high, until fluffy and sugar is starting to dissolve. Now add the eggs and continue to mix for approximately another minute. Add the vanilla extract and lemon juice, as well as the baking powder.

Turn off your mixer and add the flour. Gradually fold under by hand.

Add the diced peaches

Fill into the lined muffin pan. The recipe says 12 but I usually get about 14 out of it.

Bake for 25 minutes.

Cool

Now it is time for the frosting.

In a sauce pan combine the sugar, tartar, water and a dash of salt.

Bring to a boil while constantly stirring until sugar is dissolved.

Separate your egg yolk from the egg white.

*Be careful to NOT have any egg yolk in the egg white otherwise your frosting won't set properly. Also make sure your mixing bowl is squeaky clean and not greasy (for the same reasons).

Very slowly add sugar syrup to the egg white while constantly mixing, until stiff peaks form. This should take about 7 minutes.

When done, carefully add the vanilla extract.

Frost your cupcakes and top off with the peaches to make it look like eggs sunny side up.

*To mimic the look of pepper, I simply graded vanilla bean over the cupcakes. For the look of salt, I simply used sugar.
