Valentines chocolates

Giving chocolates at Valentines is a time honored tradition. Store-bought can be delicious, or sometimes a total disaster!!!!!

When I first moved to the states, I started making chocolates myself. It seemed the stuff in the stores was way over-priced for something that can be so easily made by yourself.

This way, I know what is in it and I can play around with different flavors and combinations!

Today I would like to share one of the simplest chocolate recipes I know, it is pretty much foolproof and has never disappointed.

By the way, this will result in a silky smooth texture, much like a truffle.

Valentine hint: can be fun to make together!!!!!!

Here is what you will need:

1/3 cup heavy whipping cream

2 Tablespoon of butter

3/4 cup semi-sweet chocolate chips

1 Tablespoon Whiskey, Baileys, or whatever you prefer. If you do not consume alcohol, you can substitute it with equal amounts of whipping cream. This is how you do it:

In a cooking pot, combine the whipping cream and butter and bring to a boil. Make sure you are stirring constantly. When the liquid is boiling, remove the pot from heat and add the chocolate chips.

Mix until smooth, either by hand, or as I prefer, with an electric mixer.

Add the whiskey or the alcohol of your choice. Mix until the chocolate has cooled off, usually about 5 minutes.

Pour into a chocolate molding dish and place in the freezer overnight. Remove the chocolates from the mold and let sit for a good hour to defrost.

If you do not have a chocolate mold, place chocolate mix in a piping bag and then in the fridge for 2 hours. When thoroughly cooled, pipe chocolate on a baking paper and decorate with sprinkles, baking cocoa or whatever your heart desires. It is very messy but can be fun too (see comment above about making this together).

Chocolate molds are available in just about every store for pretty much next to nothing. The best ones are the ones made out of silicone as it is much easier than the plastic one to get the chocolates out.

These chocolates will keep well in the fridge for about 1 week in an airtight container. Try it on Christmas with nuts and/or cinnamon. Enjoy!
