Irish soda bread


Irish soda bread is easy to make and the perfect companion to a Irish stew. This version is a bit moister then your regular bread because of the buttermilk in it.

Here is what you need:

2 cups regular flour

2 cups full wheat flour

OR

2 cups of your favorite type of flour

1 teaspoon salt

2 teaspoon baking soda

2 teaspoon baking powder

1 teaspoon sugar

4 Tablespoons butter

1 1/3 cups buttermilk

This is how you do it:

Preheat your oven to 190 C/ 375 F

Add all of your dry ingredients into a large bowel and mix well.

Add the butter and mix with your hands until well distributed. Then add the buttermilk.

Be careful, do not overmix or knead the bread too much, it gets very chewy if the glutens are released, so the faster you have it mixed, the better.

Dust your your loaf with flour and place it on a baking sheet. then cut a cross on the top of the bread and bake it in the oven for approximately 35 to 45 min.

(If you knock on the bottom of the bread and it sounds hallow it is done).

While baking your bread, place a small dish filled with water in the oven. it keeps things moist and helps your bread to rise.

Serve it warm. It tastes best when fresh, it is ok toasted as well.
