Buttermilk Waffles with apple compote
For the apple compott:
4 red apples
1/3 cup apple juice
2 Tablespoons of lemon juice
5 Tablespoons of sugar
1/2 teaspoon vanilla extract
2 Tablespoons honey
3 Tablespoons cook and serve vanilla pudding mix
Peal the apples and slice in tiny pieces, place in a pot and add the rest of the ingredients, minus the honey and Vanilla extract.
Bring to a boil and remove from heat after about 1 minute. Add the pudding mix after the apples have slightly cooled, stir very well and bring back to a boil to thicken the sauce. Let sligty cool, then add honey and vanilla extract. Cinnamon tastes great as well, during winter and fall.
For the Waffles:
1.5 cups of flower
1 cup buttermilk
6 Tablespoons sugar
1/5 Tablespoon Vanilla extract
1 Tablespoon baking powder
1 Stick of butter (if you use unsalted add a pinch of salt) melted and cooled
3 Eggs
Confectioners suger for garnisch
In a large bowel mix the eggs with the sugar, vanilla extract and the baking powder.
Drissel the melted and cooled butter into the egg sugar mix and continue beating on high.
Now alternating, add the flour and buttermilk until you get a silky and relatively thin batter.
Get your waffle iron ready and bake golden brown waffles.
When done, sprinkle powderd sugar over it.
If you do not have a waffle iron, you can also bake the dough in a pan for pancakes.
