Potthucke, aka Potato cake


Potthucke comes from the German region of the "Sauerland", which is in the mid-west of Germany (North Rhine-Westphalia). It is a rural, hilly area, in parts heavily forested and, apart from the major valleys, sparsely inhabited. With it's rich culture and proud inhabitants, they have a very unique cuisine, which consists of a very earthy, hearty aray of foods.

This potato cake is so delicious. You can eat it by itself, with a salt or as a side dish. Traditionally, in "Sauerland", it is made in a loaf form, sliced and baked in a pan. My family eats it fresh from the pan and bakes the left-overs.

Either way, enjoy!

This is what you need:

1 cups mashed potatoes

4 cups shredded uncooked potatoes

1 cups heavy whipped cream

1 pack smoked sausage (14 oz.)

4 eggs

1 Tablespoons of Worcestershire sauce

0.5 Tablespoon ground nutmeg

black pepper, white and red pepper to taste (if possible freshly ground)

salt to taste

1 Tablespoon sweet paprika

Aluminum foil

This is how you do it:

Preheat your oven to 400 Fahrenheit/200 Celsius

Use leftover mashed potatoes or boil fresh ones with the skin on. Peel when done and cooled.

In a large bowl, mash the cooked potatoes, add cream, eggs and seasoning.

Cut 2/3 of the sausage and drop in your bowl as well.

Peel, wash and shred the raw potatoes to make approximately 4 cups (was about 8 medium sized potatoes for me)

Mix well and taste the dough before filling it into a greased baking dish. Add more seasoning if necessary.

Slice the remaining sausage thin and arrange on the top of the cake.

Cover with aluminum foil and bake for about 30 min.

Remove the foil and arrange the sausage on the top and bake until golden brown

Bake in the oven for about 50 minutes.
